Dairy-Free Peanut Butter Cookies...

Though these really aren't the most beautiful cookies, they taste delicious and have become one of my husband's favorite treats during Lenten seasons.

Mix:
1/4 c. soft shortening
1/4 c. margarine
1/2 c. peanut butter
1/2 c. sugar
1/2 c. packed brown sugar
1/4 c. soymilk

Sift:
1 1/4 c. flour
1/2 tsp. baking powder
3/4 tsp. baking soda
1/4 tsp. salt

Combine mixed ingredients with dry ingredients. Chill dough. Roll into balls the size of walnuts and place on a lightly greased baking sheet. Flatten balls with a fork dipped into sugar. Bake at 375 for 10 - 12 minutes.
