Quick Meals...



My friend Angela asked me to compile a list of all my favorite quick meals and I was happy to comply.  She and her family have really been through the wringer this year.  Her youngest son, Ben, was extremely ill and was hospitalized for several months.  Now that they are home, they are trying very hard to get back into the swing of things and need to eat healthfully and easily.  If you have any other suggestions, please leave them in the comment box!  Also, please pray for Benjamin, Angela, David, and Robert!

One of our favorite family meals we call 'Crazy Bowls' I do this towards the end of the week when we have a lot of leftover bits. I put out bowls of grilled chicken or other meat, roasted vegetables, cheeses, nuts, dips (such as hummus or guacamole), and I make a sauce and grain. There may be a theme such as Italian, Greek, or Asian for example.
This week we will do Asian inspired crazy bowls so I will make up a sauce using 3 tbs balsamic vinegar, 3 tbs tamari, 2 tbs sesame oil, and 1 tbs maple syrup, and I will cook a batch of soba noodles. Everyone builds their own unique bowl, it is fun, delicious, and doesn't feel like leftovers!

Thanks, I love this list! I modified it for our family a bit, added a few things and printed it out. Meal times won't seem so scary anymore ;-)

In case you're wondering what I added: I added lasagna to the entree list, and caprese sandwiches to the sandwich list (tomatoes, fresh mozzarella, and basil - yum!)
