Sugar Plum loves fruit crisp and so she had to try her hand at making some all by herself. She used apples and blueberries for this version and it was amazing! When I make crisp, I leave big crumbles of topping and Sugar Plum was able to break the topping up very finely. The result was a very refined and delicate dessert. I was very impressed!

Peach Crisp...
Ingredients
5 cups of peeled and sliced fruit - apples, peaches, pears, apricots, blueberries*, cherries*, rhubarb*, or a combination
2 to 4 T. granulated sugar
1 cup regular rolled oats
1 cup packed brown sugar
1/2 cup all-purpose flour
1/2 tsp. ground cinnamon
1/2 cup butter or margarine
1/2 cup coconut
Method
For filling thaw fruit, if frozen. Place fruit in an ungreased baking dish. Stir in granulated sugar.
For topping, in a mixing bowl combine oats, brown sugar, flour, cinnamon, and coconut. With a pastry blender or clean hands, cut in butter until mixture resembles coarse crumbs. Sprinkle topping over filling.
Bake in 375 degree F oven for 30 -35 minutes (40 for thawed fruit) ir until fruit is tender and topping is golden. Serve warm with whipped cream, ice cream, or non-dairy whipped topping, if desired.
*Blueberries, Cherries, and Rhubarb filling should be mixed with 3 T. of flour and have the granulated sugar increased to about 1/2 a cup (depending on taste).

Apples!
A week or two ago, I bought this little apple peeler contraption at Target. I have wanted one for years and it took two trips to the store before I actually broke down and bought it. I really don't like having a million little gadgets cluttering up my kitchen (our toaster broke and it took me 18 months to replace it!), so I wanted to really be sure that I would use the peeler. Last night, I took it out of the box to make an apple cake that called for three cups of apples. In just a few minutes I had a tidy heap of apple peels and three cored and spiral cut apples sitting on my cutting board! Easy! I don't know why I waited so long... especially because we love our fruit desserts in this house!
